New Year’s FIRST MEAL – Pork & Sauerkraut
Equipment
- 1 Pressure Cooker
Ingredients
- 1.5 lbs Pork Short Ribs
- 1 jar Sauerkraut make your own or get "Bavarian" style
- 1 tbsp Brown sugar more will make it sweet
- 1 pinch Kosher salt large pinch
- 1 tbsp Soy Sauce
- ⅛ cup Chopped Onion optional, but preferred
- 1 Granny Smith Apple peeled and diced
- ½ bottle Guinness Draught
Instructions
In pressure cooker –
- Brown meat
- Sprinkle brown sugar & salt
- Layer kraut & apple (1/4 kraut -1/4 apple, 1/4 kraut- 1/4 apple, etc)
- Add soy source on top of kraut/apple mixture
- Add onion
- Pour 1/2 bottle of Guinness, drink rest
- High pressure for 20 minutes, natural release
Variation
- Omit the pressure cooker and short ribs. Put all other ingredients in a 12" skillet and nestle in 1 or 2 uncooked pork loins. Cover and simmer for at least 2 hours – up to 6 hours. That's what is in the recipe picture above.
