Brian’s Bacon and Pork Keto
Equipment
- 1 Broiler Toaster oven is best
- 1 Saucier or 12" High-Side skillet
Ingredients
- 16 oz pork tenderloin prepared (cooked)
- 8 oz bacon natural
- 16 oz baby spinach fresh
- 12 grape tomatoes cut in half
- 4 slices sharp cheddar cheese white – thick sliced
- 1 dash paprika optional
Instructions
- Render bacon in the microwave for 2 minutes on paper towels.
- Remove bacon from the microwave and cut in 3rds. I use kitchen sheers.
- Preheat toaster oven's broiler at 450˚F.
- Put partially cooked bacon in a saucier or large skillet on medium heat and continue to cook, occasionally stirring, until some of the bacon is crisp.
- Add all the fresh baby spinach and gently toss to cook the spinach. It will cook quickly due to the hot bacon grease.
- Add the sliced pork tenderloin and toss to mix well.
- Continue to heat and stir for about 2-3 minutes until the pork is warmed or heated through.
- Add sliced baby tomatoes and toss. Once well distributed, remove from heat.
- Immediately plate the mix one four (4) plates of edged soup bowls.
- Lay one slice of cheddar cheese on top of each serving.
- Put each plate, one at a time, under the toaster oven broiler for 1-2 minutes to slightly melt the cheese.
- Garnish with a dash of paprika.
- Remove and serve. The plate will be hot.
