In my attempts to assist my family with healthier meals and their passion for Keto, I created this recipe from what was on hand. Staying away from carbohydrates and added salt while creating something tasty, hearty, and healthy was the goal. This dish turned out fantastic, so it had to be included on the site.

Equipment

  • 1 Broiler Toaster oven is best
  • 1 Saucier or 12" High-Side skillet

Ingredients
  

  • 16 oz pork tenderloin prepared (cooked)
  • 8 oz bacon natural
  • 16 oz baby spinach fresh
  • 12 grape tomatoes cut in half
  • 4 slices sharp cheddar cheese white – thick sliced
  • 1 dash paprika optional

Instructions
 

  • Render bacon in the microwave for 2 minutes on paper towels.
  • Remove bacon from the microwave and cut in 3rds. I use kitchen sheers.
  • Preheat toaster oven's broiler at 450˚F.
  • Put partially cooked bacon in a saucier or large skillet on medium heat and continue to cook, occasionally stirring, until some of the bacon is crisp.
  • Add all the fresh baby spinach and gently toss to cook the spinach. It will cook quickly due to the hot bacon grease.
  • Add the sliced pork tenderloin and toss to mix well.
  • Continue to heat and stir for about 2-3 minutes until the pork is warmed or heated through.
  • Add sliced baby tomatoes and toss. Once well distributed, remove from heat.
  • Immediately plate the mix one four (4) plates of edged soup bowls.
  • Lay one slice of cheddar cheese on top of each serving.
  • Put each plate, one at a time, under the toaster oven broiler for 1-2 minutes to slightly melt the cheese.
  • Garnish with a dash of paprika.
  • Remove and serve. The plate will be hot.
