Fish Baked in Covered Dish

This is one of my Grandma Doc's fish recipes that was a family favorite. She typically used Halibut, Cod, and any white fish that Grandpa caught while on one of his many fishing trips with the family or his buddies.

Equipment

  • 1 Covered baking Dish

Ingredients
  

  • 2 lbs fish cut into chunks

Rub

  • 2 tbsp butter melted
  • ¼ tsp ground pepper
  • ¼ tsp smoked paprika
  • 2 tsp ground nutmeg

Sauce

  • 2 tbsp dry white wine at least 2 tbsp
  • 3 tbsp butter – melted
  • 1 tsp parsley
  • 1 tsp chives chopped
  • 2 tsp lemon juice
  • Salt to taste

Instructions
 

  • Preheat aven to 350˚ F
  • Combine Rub ingredients and rub mixture over fish.
  • Place fish in an overproof dish and cover with closely fitting lid.
  • Bake 20-25 minutes or until fish is firm. Time depends largely on shape of fish.
  • Add 2 tbsp white wine to dish after 10 minutes of cooking.
  • When done, place fish on hot platter.
  • Combine sauce ingredients, melt butter and add parsley, chives, and lemon juice, and salt to taste.
  • Pout sauce over fish before serving.
