
Fish Baked in Covered Dish
Equipment
- 1 Covered baking Dish
Ingredients
- 2 lbs fish cut into chunks
Rub
- 2 tbsp butter melted
- ¼ tsp ground pepper
- ¼ tsp smoked paprika
- 2 tsp ground nutmeg
Sauce
- 2 tbsp dry white wine at least 2 tbsp
- 3 tbsp butter – melted
- 1 tsp parsley
- 1 tsp chives chopped
- 2 tsp lemon juice
- Salt to taste
Instructions
- Preheat aven to 350˚ F
- Combine Rub ingredients and rub mixture over fish.
- Place fish in an overproof dish and cover with closely fitting lid.
- Bake 20-25 minutes or until fish is firm. Time depends largely on shape of fish.
- Add 2 tbsp white wine to dish after 10 minutes of cooking.
- When done, place fish on hot platter.
- Combine sauce ingredients, melt butter and add parsley, chives, and lemon juice, and salt to taste.
- Pout sauce over fish before serving.
