Equipment

  • 2 Muffin Top Pan

Ingredients
  

  • 2 boxs Jiffy Corn Muffin Mix Two 8.5 ounce boxes
  • 2 eggs
  • ¾ cup sour cream or plain Greek yogurt
  • cup milk
  • 3 tbsp honey
  • 3 tbsp sugar
  • ½ cup vegetable oil
  • cup all-purpose flour

Instructions
 

  • Preheat oven to 375˚ F.
  • Combine eggs, sour cream, milk, vegetable oil, and honey in a large mixing bowl.
  • Add the muffin mix, flour, sugar, to the bowl and mix gently until just combined. Do not over mix!!
  • Spray sides and bottom of MUFFIN-TOP PANS with a vegetable cooking spray.
  • Pour about 1/4-cup (or less) of the mixture into each well of the pan.
  • Bake for 10-12 minutes or until the top is golden brown.
  • Let cool and serve or store in the fridge and pop them into a toaster when ready to serve.

Notes

The recipe can also be made in a large, greased cast iron skillet (20-25 min) or regular muffin pan (20-25 min).
