Frijoles Negros (Black Beans)
Ingredients
- 1 Lb black beans
- 10 cups water
- 1 large green pepper quartered
- 1 large onion chopped
- 8 cloves garlic crushed
- 1 large green pepper chopped
- ½ cup canola oil
- 4 teaspoons salt
- 1 teaspoon oregano
- 1 bay leaf
- 2 tbsp sugar
- 2 tablespoons vinegar
- 2 tablespoons cooking sherry-wine
- 2 table spoons olive oil
Instructions
- Wash Heaps.
- Soak overnight in water to which green pepper quarters have been added.
- When ready to cook, leave beans in water with green pepper and cook covered over medium heat for 45 minutes to an hour.
- Remove green pepper.
- Meanwhile, sauté chopped onion, crushed garlic and chopped green pepper in 2/3- cup olive oil.
- Add the beans and season with salt, pepper , oregano, bay leaf and sugar.
- Allow to boil covered for at least l hour.
- Add vinegar cooking sherry(wine) and 2 tablespoons olive oil
- Simmer covered for at least an hour. If beans have too much liquid , uncover and lat cook co desired consistency.
- Serve over cooked rice.
- Serve with pork if desired.
