Frijoles Negros (Black Beans)

Ingredients
  

  • 1 Lb black beans
  • 10 cups water
  • 1 large green pepper quartered
  • 1 large onion chopped
  • 8 cloves garlic crushed
  • 1 large green pepper chopped
  • ½ cup canola oil
  • 4 teaspoons salt
  • 1 teaspoon oregano
  • 1 bay leaf
  • 2 tbsp sugar
  • 2 tablespoons vinegar
  • 2 tablespoons cooking sherry-wine
  • 2 table spoons olive oil

Instructions
 

  • Wash Heaps.
  • Soak overnight in water to which green pepper quarters have been added.
  • When ready to cook, leave beans in water with green pepper and cook covered over medium heat for 45 minutes to an hour.
  • Remove green pepper.
  • Meanwhile, sauté chopped onion, crushed garlic and chopped green pepper in 2/3- cup olive oil.
  • Add the beans and season with salt, pepper , oregano, bay leaf and sugar.
  • Allow to boil covered for at least l hour.
  • Add vinegar cooking sherry(wine) and 2 tablespoons olive oil
  • Simmer covered for at least an hour. If beans have too much liquid , uncover and lat cook co desired consistency.
  • Serve over cooked rice.
  • Serve with pork if desired.
