Chicken Soup

This is the go-to when people are not feeling well. I often add wide egg noodles, orzo pasta, or rice.

Ingredients
  

  • chicken breast about 3½ pounds, sliced thin on the bias
  • 1 carrot sliced on the boas
  • 1 celery stalk sliced on the bias
  • ½ medium onion diced
  • 8 cups chicken stock
  • ½ tsp salt plus additional, to taste
  • freshly ground black pepper

Instructions
 

  • Place all the ingredients in a large pot.
  • Heat to a boil.
  • Lower heat and simmer uncovered 30 minutes to 1 hour.
  • Serve.

Notes

I usually saute the onion and then add the other ingredients.
I’ve also been known to use freeze-dried chopped onions instead.
