Ingredients
  

  • 1 cup oil
  • 2 cups sugar
  • 3 eggs large
  • 3 cups flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 cup golden raisins
  • 1 tsp cinnamon
  • 2 tsp vanilla
  • 4 cups apples peeled and chopped Granny Smith apples (approx 3 large apples)

Instructions
 

  • Preheat oven to 325˚F.
  • Grease and flour 10" tube pan or bundt pan.
  • In large bowl combine chopped apples, cinnamon and vanilla.
  • Cream oil, sugar and eggs until well blended.
  • Sift flour, baking soda and salt and add to creamed mixture; mixing well.
  • Fold apples and nuts into batter. Batter will be very thick.
  • Spoon batter into prepared tube pan and bake 1½ hours until done.
  • Cool in pan on wire until completely cooled.
  • Unmold cake and dust lightly with confectioner’s sugar.

Notes

 
This cake is better the next day as it gets very moist.
