  • 1 cup oil2 cups sugar3 large eggs3 cups flour1 tsp. baking soda1 tsp. salt1 cup chopped nuts1 cup golden raisins optional I sometime use the raisins1 tsp. cinnamon2 tsp. vanilla3½ to 4 cups peeled and chopped Granny Smith apples (approx 3 largeapples)


  • Preheat oven to 325 degrees. Grease and flour 10 inch tube pan orbundt pan.In large bowl combine chopped apples, cinnamon and vanilla.Cream oil, sugar and eggs until well blended.Sift flour, baking soda and salt and add to creamed mixture; mixing well.Fold apples and nuts into batter. Batter will be very thick.Spoon batter into prepared tube pan and bake 1½ hours until done.Cool in pan on wire until completely cooled.
  • Unmold cake and dust lightly with confectioner’s sugar.


This cake is better the next day as it gets very moist.
