Fresh Apple Cake
Ingredients
- 1 cup oil
- 2 cups sugar
- 3 eggs large
- 3 cups flour
- 1 tsp baking soda
- 1 tsp salt
- 1 cup golden raisins
- 1 tsp cinnamon
- 2 tsp vanilla
- 4 cups apples peeled and chopped Granny Smith apples (approx 3 large apples)
Instructions
- Preheat oven to 325˚F.
- Grease and flour 10" tube pan or bundt pan.
- In large bowl combine chopped apples, cinnamon and vanilla.
- Cream oil, sugar and eggs until well blended.
- Sift flour, baking soda and salt and add to creamed mixture; mixing well.
- Fold apples and nuts into batter. Batter will be very thick.
- Spoon batter into prepared tube pan and bake 1½ hours until done.
- Cool in pan on wire until completely cooled.
- Unmold cake and dust lightly with confectioner’s sugar.
