Ingredients
  

  • 18-20 baby carrots cleaned
  • 1 tbsp olive oil extra virgin
  • 2 tsp kosher salt
  • 2 tsp black pepper fresh cracked
  • 1 tbsp canola oil
  • 1 tbsp tomato paste
  • 1 shallot chopped small
  • 2 tbsp honey
  • 2 tsp coriander toasted and cracked or ground
  • 1 tbsp olive oil
  • 1 cup cilantro or coriander flowers

Instructions
 

  • Toss cleaned carrots with 1 tsp of salt, 1 tsp of pepper and olive oil in a mixing bowl and grill or sear until very charred and soft throughout.To make dressing, heat a frying pan over medium-high heat. Add canola oil and shallot and cook for 30 seconds while stirring. Add in tomato paste and cook until charred slightly, stir.Whisk in honey, coriander, salt, fresh cracked black pepper and olive oil. Toss with carrots, top with cilantro and serve.

Notes

Preheat grill to high before cooking carrots.
