bay leaf

vinegar

tablespoons
cooking sherry-wine

table spoons olive oil
Instructions
Wash Heaps.
Soak overnight in water to which green pepper quarters have been added.
When ready to cook, leave beans in water with green pepper and cook covered over medium heat for 45 minutes to an hour.
Remove green pepper.
Meanwhile, sauté chopped onion, crushed garlic and chopped green pepper in 2/3- cup olive oil.
Add the beans and season with salt, pepper , oregano, bay leaf and sugar.
Allow to boil covered for at least l hour.
Add vinegar cooking sherry(wine) and 2 tablespoons olive oil
Simmer covered for at least an hour. If beans have too much liquid , uncover and lat cook co desired consistency.
Serve over cooked rice.
Serve with pork if desired.
