peeled and chopped Granny Smith apples (approx 3 large apples)

Instructions
Preheat oven to 325˚F.
Grease and flour 10" tube pan or bundt pan.
In large bowl combine chopped apples, cinnamon and vanilla.
Cream oil, sugar and eggs until well blended.
Sift flour, baking soda and salt and add to creamed mixture; mixing well.
Fold apples and nuts into batter. Batter will be very thick.
Spoon batter into prepared tube pan and bake 1½ hours until done.
Cool in pan on wire until completely cooled.
Unmold cake and dust lightly with confectioner’s sugar.
Notes
This cake is better the next day as it gets very moist.
