Oyster Dressing (Stuffing)

Oyster stuffing is a savory dish often served during holiday meals, especially in regions with strong seafood traditions, like coastal areas of the U.S. It combines the briny, slightly sweet flavor of oysters with classic stuffing ingredients. This is the classic recipe but see the Notes for my Quick & Easy Method.

Ingredients
  

  • 3 tbsp olive oil
  • ½ cup onion chopped
  • ½ cup green bell pepper chopped
  • ½ cup celery chopped
  • 2 tbsp garlic chopped
  • 3 cups cubed day-old bread
  • 2 cups oysters with their liquor
  • 1 cup chicken broth
  • ¼ cup chopped green onions
  • 2 tbsp parsley chopped
  • 1 tbsp Creole seasoning
  • ½ tsp hot pepper sauce
  • Salt and freshly-ground black pepper

Instructions
 

  • Preheat oven to 350º F. Generously oil a medium baking dish.
  • In a large skillet heat oil over medium-heat and add onion, green pepper and celery and saute, stirring frequently, 2 minutes. Add garlic and cook 2 minutes longer. Lower the heat and fold in bread cubes, oysters and their liquor, and broth until moistened. Add green onions, parsley, Creole seasoning, and hot pepper sauce.Season to taste with salt and pepper.
  • Pour dressing into baking dish, cover with foil and bake for 30 minutes. Remove foil and bake 20 minutes longer, until golden brown and crispy on top.

Notes

Quick & Easy Method:

Make two (2) boxes of Stove Top Stuffing (Turkey flavor) according to the box directions, add one (1) tub of fresh oysters (chopped), put in a casserole dish, and bake at 350˚F for 35-45 minutes.
